Saturday Afternoon Tailgate: Wildcard Weekend

I know we've already done an epic dip on the tailgate, but today's 12-Layer Dip recipe was a leftover recipe from the past week's New Year's Party (we were too full to actually make it!), so I figured I'd shift it to Wildcard Weekend.


This dish is really more of a casserole than a dip, but it doesn't matter if you eat it on a chip or with a fork, the end result tastes delicious!


Kap's Famous 12-Layer Dip

Preheat oven to 350 degrees.


The following dip will be layered in a 13" x 9" baking dish.



Layer 1: Refried Beans

  • 1 15 oz. can Refried black beans
  • 2 TBSP Hot sauce (I use Cholula, but pick your favorite)
  • 1 tsp. Garlic, chopped
  • 3 strips of Bacon, cooked and crumbled
  • 1 4 oz. can Green chiles, chopped
  • 1 2 oz. jar of Pimentos, chopped
  • 1/2 Taco seasoning packet
  • 1/2 tsp. Ground cumin
  • 2 tsp. Lime juice

Mix all ingredients and spread into pan as bottom layer.



Layer 2: Cream cheese
  • 1 8 oz. tub of Philadelphia Chive and Onion cream cheese (I use 1/3 less fat)

Spread into pan as second layer. (Soften if necessary.)



Layer 3: Mexican Rice
  • 1 8 oz. box of Mexican Rice, cooked according to the directions on the back of the box (I prefer Goya brand)

Spread into pan as third layer. (You may not use all of the rice.)



Layer 4: Seasoned Meat
  • 1 lb. Ground beef (you can also use shredded chicken)
  • 1 packet of Taco seasoning mix
  • 1/2 c. Water
  • 1/2 c. Ketchup

Brown your meat, and drain fat. Add seasoning mix and water. Heat through. Add ketchup and heat for 3 minutes until warm.

Spread over the rice mixture as fourth layer.



Layer 5: Queso
  • 1 jar of your favorite Queso dip (I prefer Tostitos)

Spread over the meat mixture as fifth layer.



Layer 6: Cheese and Fried Onions
  • 1/2 bag of shredded Mexican cheese blend
  • 1 2.8 oz. jar of French's Fried Onions

Spread cheese and onions over the top of your mix to make layer 6.

Heat first six layers in oven for 35-45 minutes.



Note: The following layers can be put in small dishes for people to add according to their taste. I suggest this for reheating purposes, as the cold ingredients will not reheat well and may wilt or brown.



Layer 7: Salsa
  • 1 jar of your favorite salsa or homemade (I like Garden Fresh Artichoke-Garlic salsa)

Spread over the mixture from the oven as layer 7.



Layer 8: Guacamole
  • 1 jar of your favorite Guacamole or homemade (I like Yucatan spicy guacamole)

Spread over the mixture to make layer 8.



Layer 9: Seasoned Sour Cream
  • 1/2 packet of Taco seasoning mix
  • 1 8 oz. jar of Sour Cream (I use Low Fat)

Mix seasoning with sour cream and add to make layer 9.



Layer 10: More cheese
  • 1/2 bag of shredded Mexican cheese blend

Sprinkle over mixture to make layer 10.



Layer 11: Sliced Green Onions
  • 3-4 scallions, chopped
  • Cilantro, chopped (to taste--optional)

Sprinkle over mixture to make layer 11.



Layer 12: Lettuce and Tomato
  • 1 bag Lettuce, shredded
  • 1 Tomato diced (I don't include this because I don't care for raw tomato on its own)

Serve this on the side--I definitely wouldn't top the dip with it, if you think you will have leftovers.



Serve with Yellow and Blue Tortilla chips.

COMMENTARY
 
A great win to kick off the season!



Who knew the Chargers would be competitive this season? Big surprise.


Andy Reid wins in a big return to Philly.




Peyton Manning strikes again.



Giants never really showed up to play this season.



Another year in the basement for the underwhelming Bucs.



Things were very different in the early part of the season.



This is one game the Eagles wish they had back.



The Raiders rival the Bucs for the NFL's worst.


When Aaron Rodgers went down, a lot of doors opened for the rest of the league.



A sweep of the under-performing Skins.



Cards were better this year, but not good enough this week.


On a snowy day (during the middle of the Lions' epic meltdown), the Eagles ran to a signature win.


Any team can win any given week in the NFL. The 5-10-1 Vikings proved this in Week 15.


This was a huge win for the Eagles, taking apart a very talented Bears team.


The biggest win of the season came on the very last weekend, when the Birds beat Jerry Jone's evil empire, earning a trip to the playoffs.


EAGLES' FINAL RECORD: 10-6


MY FINAL RECORD: 11-5


THIS WEEK'S PREDICTION: Win! -- It's risky to ever pick against Drew Brees, but the Eagles are riding high right now, and the Saints are only 3-5 on the road. Add in the fact the cold weather and the fact that the Saints are used to playing in the Superdome, and I think the Birds advance to the Divisional Round of the playoffs. 


IN OTHER GAMES . . .

  • Andy Dalton's lackluster passing is eventually going to catch up with the Bengals, but it won't be this week. Cincy's 8-0 home record will extend to 9-0 and the Chargers will go home empty-handed after a close game.

  • Expect Indianapolis to sweep the Chiefs this year, as Kansas City's defense continues to bog down in the latter half of the season.

  • It's going to be cold in Green Bay, but when you're talking about -20 degree weather, that impacts both teams equally--no one is used to playing in that kind of cold. Expect Aaron Rodgers to return to earth this week, as San Francisco rolls over the Pack in Lambeau.
